Potassium bromate in pasta is a common dietary supplement E924. This is how potassium bromate is written. It is a synthetic compound of bromic acid and lime. It can be described as white pollen or colorless crystals. This substance is a strong oxidant. It is obtained when bromine passes through a hot solution of potassium hydroxide.
The result of the reaction is an unstable potassium hypobromide, which rapidly decomposes into bromide and bromate. Potassium bromate can also be obtained by electrolysis of a solution of potassium bromide. The two processes are similar to those used in the production of chlorates.
Potassium bromate is easily separated from potassium bromide, which is present in both methods due to its much lower solubility. When a solution containing potassium bromide and bromate is cooled to 0 degrees, almost all of the potassium bromate precipitates, while potassium bromide remains in the form of a solution.
Potassium bromate is used in the food industry, where it is designated E920 or benefit of cysteine. It is a flour improver. Strengthens the dough and prevents the formation of lumps. Improves the rising of the dough. At low values and correct conditions of use it improves the quality of bakery products.
